Chicken, Rice, Broccoli and Cheese Recipe

Before you say "yuck," let me tell you that any vegetable you would normally eat with chicken can be substituted for broccoli.

Here's what you do (it's really so easy!).

To feed 2-4 people, you will need:

2 boneless, skinless, chicken breasts
3 cups cooked rice (instant or normal, doesn't matter)
3 cups of your veggie of choice
8 oz cheese (or less if you want less)

1. Preheat your oven to 350 degrees.
2. Get your rice cooking if you haven't already. Follow the directions on the package.
3. Get a dish to bake your chicken. The chicken can be thawed, but the cooking time here is for frozen. Lay your chicken in the dish and sprinkle paprika and salt thickly on the top side of the chicken. Put it in the oven for 30 minutes.
4. While the chicken is baking, shred your cheese.
5. Turn the chicken over, sprinkle the other side with paprika and salt, and put it back in the oven for 30 minutes.
6. Check your rice. Is it done?
7. Cook your veggie (I use broccoli).
8. Chop up the meat into bite-sized pieces.
9. When everything is cooked, get a big casserole dish and layer the food: rice, half of the cheese, meat, broccoli, the rest of the cheese.
10. You can eat it immediately or heat it in the oven for about 15 minutes at 300 degrees.

This is a very easy recipe and I often increase the amounts and use it to cook for others too. You can add more spices if you are a spicy person.
