Eggplant Frittata Recipe

I plan to try this soon. I have an eggplant that will soon be bad.

1 eggplant
1 red bell pepper
2 cloves garlic
olive oil
cornmeal

Cut off top of eggplant and peel off skin. Make vertical slices like julienne fries. Boil in pot of water with a handful of salt for 5 minutes (add a few pieces of eggplant at a time to water).

Cut bell pepper in strips.

Pull the eggplant pieces out, leaving the seeds in the water.
Mash the excess water out of the eggplant and let it cool. Toss with two handfuls of cornmeal.
Heat 3 tablespoons of olive oil in a skillet, then cook pepper till toasty hot. Add crushed garlic and crushed red pepper. Then add a bit of the eggplant at a time and cook. Turn the whole frittata over with the aid of a plate, cook for a few minutes, and do it again, up to 4 times. Serve with crusty bread.

Eggs do not really come from plants. They actually come from birds.
